End of Summer Mini Pie Recipe



Last weekend Betty the Bunny got two, amazingly huge and delicious peaches from the Webster Street Market and has been dying to make pies of them- especially since summer is ending and it'll be harder to find good, fresh berries and peaches.

Luckily, yesterday she got a chance to make the peach and mixed berry pies to bring to a party. They were a huge hit! People loved them. It was also great because it's lactose-free, so everyone could enjoy them!

(And yes, you can Freeze them! :))

This will make about 26 End of Summer Mini Pies (13 peach and 13 berry) and 1 Chocolate Rose Pastry 

Ingredients you will need:

Flaky Pastry Crust
1 Peach
3 Cups of Berries (strawberries, blueberries, raspberries, blackberries)

NO sugar- the fruit is sweet enough- plus it makes the pies healthier! 

You will also need:
Muffin Tin
Knife
Cup
Sewing Needle (knife works too)
Top of Salt Shaker (or soda-pop lid, milk cap, ect)

Directions:

Preheat oven to 425 degrees. Make the Flaky Pastry Crust and roll it out. Take a cup, rub the edges with flour, and use it like a cookie-cutter to cut our circles in the dough.

Place circles in muffin tin. (Make sure that you grease it well if it's not non-stick.)

Place peach slices in every-other crust and berries in every-other crust.

Put in oven for about 7 minutes. While the pies are in the oven cut out mini-circles using top of the salt shaker (or something around that size.) (This is where the needle really helped- if the dough got stuck in the salt shaker top, you can stab the dough out through one of the small holes using the needle.)

Take the small circles and cut 6 lines in it around the edge (don't cut all the way to the center.)


Pinch the corners that have been cut- this makes the flour petals.

Cut a long strip of dough and section it into triangles- these are the leaves.

Take out pies. Place leaves and flowers on top of the berries and peaches.

Place back into oven and let bake for around 5-6 more minutes- until the crust is golden-brown.


Enjoy!

It is especially tasty served hot and with ice cream! Yum!

Flaky Pastry Crust


This is a family recipe perfected through generations. It is extremely flaky and delicious. Throughout my childhood I remember people complementing my mother's pies, and to this day I don't think any other crust comes even close to this recipe. There are 2 versions of the recipe- the hearty version- which is my favorite, and the general version.

Hearty Pastry Crust Ingredients

You will need:
2 Cups Wheat Flour
1 1/3 Cups White Flour
2/3 Cup White Flour
Ice Water (yes- it MUST be ice water)
1 Teaspoon Salt
1/8 Cup Wheat Germ
2 Cups Shortening (butter is also very good)
Pinch of Baking Soda

General Pastry Crust Ingredients

You will need:
3 1/3 Cups White Flour
2/3 Cup White Flour
Ice Water (yes- MUST be ice water)
1 Teaspoon Salt
2 Cups Shortening (butter is also very good)
Pinch of Baking Soda

Preheat oven to 425 Degrees

In small bowl combine 2/3 cup white flour and ice water to form a cold paste.

In a large bowl combine the rest of the ingredients. 

Add chilled flour paste. Mix by hand. Mix as little as possible. The less you touch the dough- the better. You want to be able to still see chunks of shortening unmixed in and when you try to hold the dough it flakes apart. 

Sprinkle flour on a clean counter top and place dough on top. Flour your rolling pin and roll out dough. Again- the less you roll out the dough, the better. 

Cut dough into shapes you want and put in greased pan. Cook for time asked for in recipe.

Chocolate Rose Pastry

Ever have extra Flaky Pastry Dough left over and you don't know what to do with it? Make a Chocolate Rose Pastry! (I like making it as a special treat for my husband- who is more obsessed with chocolate than I am, believe it or not! ;D)



Ingredients you will need:
Left over pastry dough
Any chocolate lying around

That's it!

lay the dough out. Place chocolate in center. You can either put it in whole or put in shavings. I like to do shavings so I can mix dark chocolate, milk chocolate, and 99% cocoa chocolate.
Take the edges of the dough, lift them up together, and pinch in the center.

Cook for about 10 minutes at 425 degrees. 


 Eat it while it's hot! Yum!

Super Quick, Super Easy Steak



Didn't have time to marinate a steak and have a craving for a flavorful one RIGHT NOW? Yeah, been there. This is a laughably simple recipe for an amazing tasting steak in minutes. (Thanks to my amazing chef hubby for the recipe! (And the steak)) Recently Seamore the Seal got hungry for steak too!

You will need:
STEAK
Salt- seasoning salt is best
Pepper- seasoning pepper is also tasty
Freeze-Dried Red Onion
Worcestershire Sauce 
Liquid Smoke

That's it!

Place equal parts salt and pepper in bowl. Press steak into salt and pepper. Throw on skillet/grill/whatever.

Put on high to crisp and brown the outsides of the steak. Sprinkle liquid smoke and worcestershire sauce.

Turn to low to cook to your taste in steak doneness.That's it! You're ready to fix your craving.
