Sudaes For Dinner?!: Toby's Roast Beef Sundaes

Want to get your kids excited for a healthy meal? Try Roast Beef Sundaes. It's an attractive way to present healthy food and with 'toppings,' children have a choice on what to put on their sundaes- making them like it even more. (And more likely to ask for more carrots!)


Here's what you'll need:

Sour Cream
Cherry or Grape Tomatoes
Chives


Directions:


Set up the sundaes by slapping some mashed potatoes in a bowl- this is the ice cream of the sundae. 

Pour roast beef over the mashed potatoes- this is the hot fudge on the sundae.

Add a large dollop of sour cream and a cherry or grape tomato- this is the whipped cream and cherry on top!

Toby always has a pair of scissors only for cooking, just like knives- used only in the kitchen and cleaned often. The kitchen scissors make it super easy to cut the chives onto the roast beef sundae.

Great toppings for the sundaes:
Peas
Garlic or onion salt
Carrot shavings/gratings or diced carrots
Sliced mushrooms
Onions
Sliced green beans 
Hot sauce
Cheese (put in microwave to melt it too)
Goldfish crackers



This is a great dish to freeze for later- just put the mashed potatoes, roast beef, chives, and salt and pepper in and freeze! It makes an amazing home-cooked meal in the middle of a work day. A little warm bit of home at your job! Add the not as freezer or microwave friendly toppings later- such as sour cream and tomatoes.
