Bacon Jam (Yes- It's As Good As It Sounds!)




We got the idea from Fressa Truck- a really, really delicious restaurant on wheels. We always get food from them when at the Webster Street Market. Recently Sonya the Kitten decided to make a recipe of her own!

It's amazing for burgers, dip, nachos, corn bread, biscuits, tacos, Stuffing Chicken, potatoes, Stuffing Steak, hot dogs, sausages, grilled cheese sandwiches- whatever you can think of! Plus it's easy to Freeze to use later.

Ingredients You Will Need:
24 Oz. Bacon
1 Clove Garlic Minced
1/4 Onion Minced
1/4 Red Pepper Minced
1 Teaspoon Salt
3 Teaspoons Black Pepper
1/3 Cup Coffee (Brings out bacon flavor)
1/3 Cup Maple Syrup (Light Syrup is good)
2 Teaspoons Liquid Smoke
1 Teaspoon Worcestershire Sauce
1/4 Cup Brown Sugar (Brown Sugar Sweetener is also good)

Directions:
Fry bacon in pan on high to make it good and crispy.


(Sonya used a wok- which woked out nicely ;)) Drain most of the fat- till there's about a tablespoon left. Add 1/4 cup brown sugar, 1 teaspoon salt, and 3 teaspoons black pepper.

Stir everything so that it sticks to the bacon and the brown sugar melts slightly. Put into crock pot but leave the grease in pan. Turn stove on medium-low. Cook 1/4 red pepper, 1/4 onion, and 1 clove garlic in remaining grease until tender- not browned.


Add 1/3 cup coffee, 1/3 cup maple syrup, 2 teaspoons liquid smoke, and 1 teaspoon worcestershire sauce. Bring to light boil.

Pour in slow cooker with bacon.


Turn slow cooker on high and let cook for 1-2 hours until contents is thick and syrupy.


Put in food processor or blender and turn on high. There! A delicious, different treat! It is very flavorful so a little bit really will go a long way. My goodness, it makes the house smell incredible.
