Caramel Apple Cookie Recipe




Seamore the Seal decided to make Caramel Apple Cookies with some of the Apples Betty the Bunny Picked. This recipe has less sugar than other recipes because the apples add a lot of sweetness- not to mention the caramel! Yum! It's a great treat to bring to church- both adults and children love them!


Ingredients You Will Need:

1 Cup Oatmeal
2 Cups Flour
1/3 Cup White Sugar
1/3 Cup Brown Sugar
1/2 Teaspoon Salt
1 Teaspoon Baking Soda
1/2 Teaspoon Baking Powder
1 Teaspoon Cinnamon
1 Egg
3/4 Cup Softened Butter
2 Farm-Picked Apples (or 1 Store Apple- they're bigger)
1 Tablespoon Vanilla (Mexican Vanilla is best)
2 Tablespoons Apple Cider (This is not necessary- but adds extra flavor. :))
1 Bag Caramel Squares
 Wax Paper

Makes about 26 cookies.

Directions:

Preheat Oven:
350 Degrees

Mix dry ingredients together.

Cut the apple(s) into quarters. (This makes it easier to grate them- plush then you don't have to worry about seeds.) Grate apple(s) into a bowl.



Add wet ingredients to bowl. Mix.


If you want the dough to be easier to manage place in fridge for 1 hour. Cut caramels in half.

Form dough into small balls. Place caramel half on ball.

Cover with more dough. Place dough on wax-paper covered cookie sheets.

Cook for 12-14 minutes.

Ready for delicious cookies! If you're not serving them fresh, it's a good idea to microwave them for a couple seconds so the caramel is always melty and gooey.

Shortcut Section:

Instead of using real apples and grating them (though it really doesn't take much time at all) replace 3/4 cup of butter with 3/4 cup of apple sauce.
