A while ago my husband came up with an idea for a different, amazing meal. Princess the Penguin helped out! It's a great comfort food- flavorful and filling. It's perfect for any time of the year and is great for impressing guests. :)
Ingredients You Will Need:1 Bag Easy-Cook Mushroom Rice
1 Cup Ranch Dressing (Hidden Valley or a yummy home made ranch is best)
1/2 Teaspoon Salt
1/2 Teaspoon Black Pepper
1/4 Cup Vinegar (garlic vinegar is best)
1/2 Cup Sour Cream (with chives is best)
1/2 Red Onion
1/2 Head Garlic
Large Handful of Mushrooms
1 Chicken Bullion Cube
1/4 Cup Milk
1/4 Cup Peas
Directions:Slice 3 chicken breasts into cubes. Marinate in 1/2 cup ranch, 1/4 cup vinegar, 1/2 teaspoon salt, 1/2 teaspoon black pepper and water (just enough to ensure chicken is covered in marinade.) Let marinate over night or for a day or two to really soak in the flavor.
Finely chop 1/2 red onion, 1/2 head garlic, and large handful of mushrooms.
Fry chicken in pan (or wok) with half of the mushrooms, a pinch of garlic, and a pinch of onions.
At the same time begin cooking the mushroom rice with 1 chicken bullion cube, 1/4 cup peas, half of the mushrooms, a pinch of onion, and a pinch of garlic. Do not cook the rest of the garlic or onion!
In a bowl- mix 1/2 cup sour cream, 1/2 cup ranch dressing, and 1/4 cup milk.
Great! Now just get it ready to serve! Put a layer of chicken in the bottom of a bowl. Add a layer of garlic and onion. Add layer of rice. Top off with the ranch/sour cream/milk mixture.
Princess wanted a lot of the sauce-
but my husband only put a little on.
A little bit of this meal will go a loooooong way. It's so unique and delicious- I highly recommend it.
Shortcut Section:Use pre-cooked chicken in the cold meat section and pre-cooked rice.
