Recipe: Red Soup- Twist on Borscht



This recipe is from my mother-in-law. I always hated beets- but this is delicious.

Casey the Puppy decided to make Красный суп (Red Soup)- a different kind of borscht (борщ.) Its bright red coloring and flavor are wonderful. Even people who hate beets will be converted. It's delicious and healthy. :)

Ingredients You Will Need:

1 Lb of Ground Beef
1 Potato
1 Beet- separate the leaves from the beet- but you will need both.
1 Cup Noodles- any kind
4 Cups Water
2 Teaspoons Garlic
1/2 Onion
1 Tablespoon Salt (Seasoning salt is best)
2 Teaspoons Salt
1 Teaspoon Pepper
4 Teaspoons Paprika

Fill pot with water and add 1 Tablespoon of salt. Put on stove on high heat. Add cubed potatoes. 


Once it starts boiling, turn heat to medium. Take ground beef and mix with 2 teaspoons of salt, 1 teaspoon of pepper, and 4 teaspoons paprika. Adding parsley, dill, chives, or freeze-dried chives is also really good.

Roll the ground beef into balls and drop in water. Add 1 cup noodles, 1/2 onion, and beet leaves. While it is cooking grate beet with cheese grater. 

Once the potatoes and meatballs are done turn off the heat. Wait a little for soup to cool down slightly. Add grated beets. This is what gives it the beautiful red color.


Do not add the beets before now the soup will be brown- not red. See- didn't take long! Though it's best if you leave it in the fridge over night- then all the flavors really seep together- it makes it so much better even. It's delicious with sour cream (especially sour cream with chives) and toasted bread! Yum!
