Salted Lime Dark Chocolate Cupcake Recipe

Betty The Bunny Tutubuddy decided to try out a recipe idea. It ended up being a huge hit at the party. It's so delicious- dark chocolate cupcakes with a salted lime curd filling, lemon dream pillow-top icing, and candied salted limes to top it off. (Though next time Betty will add dark chocolate shavings on top to bring out the chocolate more.) The directions might seem like a lot in the beginning, but remain calm, it's really not so bad, everything fell into place beautifully.

This recipe will make 12 cupcakes.

Ingredients You Will Need:

Dark Chocolate Cake:

Use a half batch of  Amazingly Moist Chocolate Cake using Hershey's special dark cocoa powder.

Salted Lime Curd:

1 Cup Sugar
1/4 Cup Butter
 3/4 Cup Lime Juice
1 Tablespoon Lime Zest
2 Eggs (If possible get the irradiated eggs to eliminate the chance of salmonella.)
3 Medium Grains of Coarse Sea Salt

Lime Dream Pillow-Top Icing:

1 Can Cream Cheese Icing
1/4 Cup Margarita Mix
1/4 Cup Flour
4 Tablespoons Lime Juice
1/4 Teaspoon Salt

Candied Limes:

1 Lime
1 Bowl of Sugar
Sprinkling of Salt


Preheat Oven for 450 (for Candied Limes)
Begin with the Salted Lime Curd: Place 1 cup sugar, 1/4 cup butter, 3/4 cup lime juice, 1 tablespoon lime zest, and 3 grains of unground sea salt in a double boiler. (You can just use a pot- but you have to stir more often and be careful that the curd doesn't come to a boil.) Let on heat and stir until it is liquid.

Meanwhile begin the Candied Limes: Take a lime, slice it into very thin slices. Take a bowl of sugar and press the lime slices into the sugar. 

Turn over and press other side. Put all the lime slices on a cookie sheet. Sprinkle with a little bit of salt. Place limes in oven (at 450.) Bake until the limes are slightly browned. Remove from oven.

Preheat Oven for 350 (for Dark Chocolate Cupcakes)

Continue Salted Lime Curd: beat 2 eggs in a bowl. Add about 1/4 of the lime/salt/butter mixture to beaten eggs and stir until combined. Pour egg mixture into the double boiler with the rest of the lime/salt/butter mixture. Stir. Continue leaving on heat for another 10-15 minutes. 

Make Dark Chocolate Cupcakes: Use a half-batch recipe from Amazingly Moist Chocolate Cake Recipe and make as directed. Pour cake batter into cupcake tins and bake. 

Remove Salted Lime Curd from heat and let cool while the cupcakes are baking. 

Now for the Lime Dream Pillow-Top Icing: While cupcakes are cooking and curd is cooling take a can of cream cheese icing and put in a bowl. (Normally I would have done this from scratch too, but this was party #3 on the weekend of 3 parties (Friday, Saturday, and Sunday)- and I made something for each of them, so making my own icing from scratch sounded exhausting at this point.) Add 1/4 cup margarita mix, 4 tablespoons lime juice, 1/4 teaspoon salt, and 1/4 cup flour. Stir. It will make this amazing, lovely texture. Plus it tastes so good!

Remove Dark Chocolate Cupcakes from oven. 

Cut a hole in the center of the cupcake. 

Fill with Salted Lime Curd. 

Place the top of the removed section of cupcake back on top. 

Spoon a generous amount of the   Lime Dream Pillow-Top Icing on top. 

Garnish with a Candied Lime.

Oh my gosh, yum!

Shortcut Section:
Dark chocolate boxed cake mix, canned lime curd (and a little salt), but the icing is already short-cutted. :)
