Pork and Sauerkraut Recipe


It's a new year! Time for a German, family tradition- pork and sauerkraut dinner. So delicious! Here is a tasty family recipe to enjoy. It's especially good since it's in a slow-cooker, so everything is so moist and flavorful.I love this recipe because it has elements from my mother, father, one of my uncles, one of my aunts (from the other side,) and my mother-in-law- family from every branch of the tree- and isn't that what the holidays are about? :) Leo The Lion was around to help me out this time.

Ingredients You Will Need:


Pork and Sauerkraut:


Pork Tenderloin
6 Sausages (or 8 hot dogs- hotdogs marinated and cooked in sauerkraut was a childhood favorite of mine.)
5 Strips of Bacon
4 Cloves garlic
2 Thin Slices of Onion
3 Sprigs of Dill
Sauerkraut (bag is best, but can is good too)
1/2 Can Beer
1/2 Apple= sliced
1 Tablespoon Brown Mustard
3 Tablespoons Pickle Juice

Dumplings:

1 Cup Flour
2 Teaspoons Baking Powder
1 Teaspoon Sugar (or Splenda)
1/2 Teaspoon Salt
1 Tablespoon Butter
1/2 Cup Milk

Directions:


Put 1/2 can beer, 3 tablespoons of pickle juice, 4 cloves of garlic, and 3 sprigs of dill in bottom of crock pot.

If the sauerkraut is canned drain the juices. Mix sauerkraut, 1/2 apple, and 2 thin slices of onion together. Put half in slow cooker. Place pork tenderloin, bacon, and sausage in sauerkraut. Luckily this year we got super hot sausages- it's helping out with my husband and I with our colds. Pour 1 tablespoon brown mustard over meats.

Place rest of sauerkraut mixture over the meat. Cook. (7-8 hours for low (my recommendation) and 3-4 on high.)



The meal cooking will make your house smell so delicious! (One reason why I love crock pots so much.)

Once done cooking make the dumplings- mix 1 cup flour, 2 teaspoons baking powder, 1 teaspoon sugar, and 1/2 teaspoon salt together.
Mix dry ingredients for dumplings.
 Add 1 tablespoon of butter and mix until crumbly. Add 1/2 cup milk and mix well.





Remove sausage. Put in a bowl and cover with towel (this keeps it warm.)

Place 1/2 sauerkraut mixture elsewhere (I like to use the lid of the crock pot so there aren't extra dishes.

Place dumplings in slow cooker.

Put the sauerkraut mixture back on top.

Put crock pot on high and leave for about 20 minutes. Now serve! Yummy! It's great with white sparkling grape juice or milk. Happy new year! If you want to make this last quite a few meals down the road, save any extra sauerkraut, place hotdogs in it and set it in the fridge. (I got this recipe from my dad ;)) Remove hotdogs and eat when you want- it's some of the best leftovers- the hotdogs are so tender and delicious, it's great for several lunches or dinners.
