Empanadas Rojas (Red Empanadas) Recipe

Empanadas Rojas- YUM!

Leo The Lion Fluffyfriend decided to make Empanadas Rojas! They were our favorite food in Ecuador. They're delicious with spicy meat in a corn dough that is deep fried. Amazing! 

Ingredients You'll Need:


Taco Meat (Taco Meat Recipe Here)

4 Cups Corn Meal
1 1/4 Cups Shortning
1 Tablespoon Salt
1 3/4 Cups Chicken Broth (Water is fine for this, but chicken broth is better.)

Directions:


Cook the taco meat in the pan. Using a slitted spoon, place meat in a bowl, leaving the grease in the pan.

In a different bowl beat shortning on medium speed. Add 1 3/4 cups chicken broth and 1 tablespoon of salt. Still beating on medium, slowly add 4 cups of corn meal. Roll dough out and cut out circles (or form in your hand.)

Place taco meat in the center of the corn meal dough. Pinch the dough closed. Heat taco grease in pan. Fry the beef-filled dough in the taco grease until dough is golden.

Cooking Empanadas!
