Блины /Blini Recipe (Lacy Russian Stuffed Pancakes)







Blini/блины are thin, buttery, Russian pancakes traditionally stuffed with meat, jam, or preserves. They are buttery and delicious! Not only that, they're beautiful with a gorgeous, lacy pattern on them. I first got to try it the first time I met my current boyfriend's mother (now my mother-in-law.) It was a great first taste of a Russian meal. (My very first taste of Russia was when my good friend (later husband) brought me some amazing dark Russian chocolate a week before we began our relationship 5 Years Ago. :}) Sonya The Kitten Tutubuddy decided to make some! (The first couple times it will be difficult, but the more you make them the easier they get. Especially don't get disheartened with your first blin, as the Russians say, "Первый блин всегда комом." (The first blin is always lumpy.)) These are so very easy to Freeze and save for later too!

Ingredients You'll Need:


3 Cups Flour
3 Cups Cold Water
1 1/2 Cups Milk
1 Egg
1/2 Teaspoon Salt
1/2 Teaspoon Baking Powder
1 Stick Butter

Whatever you want to stuff the pancakes with- meat, jam, and preserves are the traditional things to stuff blini with. You can also use syrups, fresh fruit, chocolate chips, whipped cream, Nutella, peanut butter, ect.

Directions:


Cook beat as desired (It's great with smoke sauce, chives, paprika, garlic powder, and onion salt.)


In a large bowl mix 3 cups flour, 1/2 teaspoon salt, and 1/2 teaspoon baking powder. Mix.

Add 3 cups cold water and 1 1/2 cups milk. Mix until batter is runny and thin. Add 1 egg and mix into batter.

Turn stove on medium heat. Slice off a thin piece of butter and put on hot pan and roll around. (Small pans are usually best for making sure the blini are nice circles.)


Pour some batter onto pan. Tilt the pan around to run the batter around for a very thin blin.



They cook pretty quickly, when you see the top of the batter is mostly dry, flip the blin.

Look how beautiful and lacy they are!

Let cook on that side for a couple minutes more and take blin off pan. Traditionally you then rub both sides of the blini with butter, but I won't lie, I always feel too lazy to do that and they still taste delicious.
Place beef or jam in center of the blin and fold over.

Delicious sweet jam blin.

Yummy meat blin.




Eat and enjoy! You can have the meat ones with sour cream and the sweet ones with whipped cream. It's amazingly delicious. Enjoy your taste of Russia! :)
