Baked Potato Soup Recipe


This baked potato soup is a delicious, lighter potato-based soup. The potatoes are soft and delicious with their salted, crispy skins. It is really tasty- both hearty and refreshing. 

Ingredients You'll Need:
1 Large Pot Chicken or Beef Broth (see Homemade Stock and Homemade Broth recipes)
3 Potatoes
3 Carrots
1 1/2 Cups Chopped Fresh Parsley
3 Cloves Diced Garlic

Directions:
Bake the potatoes- my husband and I adore The Perfect Baked Potato from Creating Naturally. Use the recipe there to make the potatoes fluffy and crispy. 

Let them cool. Chop the carrots and  parsley. 
Heat up the broth in a large pot with the diced garlic. I used stock that I had made before and Frozen
Cube the potatoes. 
Put the heat on low. Put the potatoes, carrots, and parsley in the pot and let stew for 5 minutes.

Serve and enjoy the tasty soup!
