Blueberries and Cream Russian Pancakes (Blini) Recipe


These blini (блины) are deliciously sweet! Gooey and filled with wild blueberries and a custard-cream they are sure to please! You can also stuff crêpes with the blueberries and cream-custard or top off pancakes. I got the idea from combining delicious Blini (Блины) and Blueberries And Cream. Seamore The Seal Fluffiefriend helped out.

Ingredients You'll Need:

Blini/Блины (Recipe Here) (Though the blueberries and cream recipe is enough for about 1/3 of the blini- the rest you can make meat or fill with jam or nutella.)
2 Cups Frozen Wild Blueberries
1 Tablespoon Honey
Pinch of Salt
2 Tablespoons Corn Starch (or Flour)
1 Egg
3/4 Cup Heavy Whipping Cream
1/3 Cup Condensed Milk

Directions:

In a pot place wild blueberries, honey, and salt. Heat on low. Slowly add corn starch or flour to thicken the sauce.
Set aside. In a different pot pour the whipping cream, condensed milk, and egg.

Heat on medium-low heat, beating with a whisk the entire time. Once the mixture is fluffy and bubbling turn off the heat. As the mixture cools continue to whip. Glob the blueberries and cream sauce in the blin.
 You can add a couple fresh blueberries if you have them- it's delicious if you do! Fold up the blin. Serve and enjoy! It is so delicious- fluffy, gooey, and sweet! It makes for a deliciously tasty breakfast or dessert!
