5 Minute Jam

5 Minute Jam



This super duper duper easy jam just takes 5 minutes and one ingredient. I have been absolutely loving the strawberries this year- they have been amazing! So it's been a great year for me to make this jam. I discovered recently that I love natural peanut butter and have been wanting PB&J's, but we almost never have bread around and rarely have jam. I went out and bought some bread, but still had the jam problem. I looked up a bunch of recipes online, but it seemed to me that jam should be simple. Very simple. I made a low-sugar jam, but had a ton left over. It was a bit frustrating. So I came up with this jam. Seamore The Seal Fluffiefriend helped out.

Ingredients You'll Need:


A handful or two of fruit per serving. That's it. No sugar, no gelatin, nothing. We're going super old-school jam here. Berries are already sweet and full of natural sugars, so we will not be adding any. If you're making it with some more bitter berries, like blackberries then I would recommend adding some blueberries for sweetness. Apples also work for sweetening.

Directions:


Take the berries or other fruits and throw them into the pot on high heat.
Stir like crazy. Don't stop stirring or they'll burn. Keep on heat until the berries are mushy and jam-like. Remove from heat.

You can do this at a much lower heat if you don't want to stir for 5 minutes, but it will take longer and you still have to keep an eye that they don't burn. The jam goes amazing on peanut butter and jelly sandwiches and my husband loves it on buttered toast.

It's so fresh and delicious- it's tasty hot or cold. You can put it on ice cream or eat it by itself. Sometimes I like to just take a small bowl and mix some of this jam with peanut butter and eat it. A great thing about it is that you can really have fun experimenting with various flavors like strawberry kiwi jam- yum! It's so much healthier and better tasting than the jams you get in the store anyway.

Oatmeal Berry Yogurt Pancakes Recipe




Nummy nummy pancakes! These pancakes are utterly delicious! They're healthier with the berries, oatmeal, and yogurt than regular pancakes while still getting you that pancake fix. They're fantastic for keeping you fuller longer. Seamore The Seal Fluffiefriend helped out.

Ingredients You'll Need:

3/4 Cups Greek Yogurt
1/4 Cup Raspberries
1/4 Cup Blueberries
1/4 Cup Blackberries
1/4 Cup Strawberries (Chopped)
1/2 Cup Flour
1 Cup Rolled Oats
1 Egg
1 Teaspoon Baking Powder
1/2 Teaspoon Baking Soda
1/2 Teaspoon Salt
1 Tablespoon Honey
2 Tablespoons Butter, Melted

Directions:

Pretty simple- mix everything together and cook!


Serve and enjoy! It goes great with 5 Minute Jam and boysenberry syrup.

Cherry Cordial Cake Recipe

Dark Chocolate Cherry Cordial Cake


I recently realized that I never posted this recipe! I made the chocolate cherry cordial cake for a party we went to on Valentine's Day. It's chocolatey-sweet without being overwhelming. The moist cake is delicious with unsweetened whipped cream, maraschino cherries, and a dark chocolate topping. Knitty The Penguin Fluffiefriend helped out. I will admit that my Oleg and I only had one piece, that we shared. We were full and chocolate overloaded after our Valentine's Day Fondue, but everyone at the party loved it! Oh yes! Why I chose to do cherry cordial!- It was a red and black party, where all the girls wore read and all the men wore black, so I did the cake dark chocolate for the black and the maraschino cherries for the red. It matched the party beautifully! Plus cherry cordials just go with Valentine's Day.

Ingredients You'll Need:

Ingredients For Dark Chocolate Amazingly Moist Cake
Ingredients For 2 Batches Dark Chocolate Fondue
2 Cups Heavy Whipping Cream
1 Teaspoon Vanilla Extract
Red Maraschino Cherries

Directions:
Bake a Dark Chocolate Amazingly Moist Cake (I decided to do mine in the shape of a heart to go with Valentine's Day.)

Whip the heavy whipping cream with the vanilla extract. Cut the cake in half and put the whipping cream on the bottom half. Litter with maraschino cherry halves.


Place top half of cake back on. Make 2 batches of Dark Chocolate Fondue. Pour the fondue over the cake.

Decorate with maraschino cherries. Serve at the next party! I mean people love, love, loved it!
